Japanese Chef

Taiji Maruyama is a third-generation sushi chef and Owner Chef of MARU London, with over 27 years of experience. He began his journey under his father in Japan, building a strong foundation in traditional sushi and omakase. He later trained in Tokyo at three Michelin-starred restaurants in Ginza, refining his craft at the highest level.
His career took him to Nobu London, where he rose to Executive Chef, blending modern Japanese cuisine with tradition.He went on to lead the kitchen at Beaverbrook, where he developed a philosophy of combining seasonal British produce with Japanese techniques.
He is the chef behind TAKA Marylebone and MARU London, with MARU featured in the Michelin Guide for five consecutive years. His cooking is rooted in seasonality, simplicity, and trust, delivering a refined and deeply personal omakase experience.
