Italian chef Paolo Griffa is one of Europe's most exciting culinary voices, known for his imaginative and technically precise approach to modern cuisine. Born in Piedmont, a region celebrated for its rich food culture and traditions, he trained in some of the world's leading kitchens including "Combal Zero," "Piccolo Lago," "Le Chateaubriand," "Septime," and "Serge Vieira." He gained early international recognition after winning the S.Pellegrino Young Chef Award for Italy in 2015. 

In 2022, he opened "Paolo Griffa al Caffè Nazionale" in Aosta, which earned a Michelin star just three months after launch, alongside recognition from Forbes as one of Italy's most influential under 30. His cooking draws deeply from the culture and ingredients of the Aosta Valley while delivering a contemporary and unexpected dining experience.
